Is it just me or is this week snailing? I can't believe it's only Wednesday. Over the weekend I finished my binge watch session of Veep and I'm now depressed and looking for a new show. Any recommendations? Tonight I'm going to see Ellie Goulding, one of my fave singers, for the third time and I couldn't be more excited! Now, on to the food...
For as long as I can remember, mac and cheese has been one of my favorite things to indulge in. There's nothing better than digging into a bowl of steaming baked mac and cheese and breaking through the breadcrumbs and cheesy topping to the gooey goodness underneath. Here's my version.
Three Cheese Baked Mac & Cheese
- 2 tbsp butter
- 2 tbsp flour
- 1 cup light cream
- 1/3 cup of freshly grated gouda
- 1/3 cup of freshly grated gruyere
- 1/3 cup of freshly grated parmesan
- 2 cups pasta
- 1 small piece of bread (for breadcrumbs)
- 1 scallion
- salt and pepper, to taste
In a small frying pan, break bread up into tiny pieces and sauté with butter until browned. Season with salt and pepper. Set aside.
In a medium pot, boil water and add 2 cups of pasta. Cook until very al dente, strain, and set aside.
Preheat oven to 350 degrees.
In a medium pot over medium heat, melt butter. Mix in flour to form a smooth paste. Add milk and continue to cook, stirring constantly, until it starts to thicken. Add cheese and stir until melted. Pour pasta into the mixture and mix up.
Pour mixture into a heat proof bowl and top with more freshly grated cheese and breadcrumbs. Bake for about 15 minutes until browned. Garnish with fresh scallions and enjoy!
