Right now I am on a smoothie kick. I've been trying to get back into my workout grind that unfortunately fell on the wayside during the holidays. Ack! I don't have time to workout in the morning before work because it would take too long for me to do my hair afterwards (aka my excuse to myself to sleep in) so I normally go to the gym after work, and then enjoy a exercise fruit/veggie smoothie.
When I was in Saratoga Springs with my family, my mom and I went to the Saratoga Juice Bar and had a smoothie that I haven't been able to get out of my head since. It had cinnamon, coconut milk, banana, and vanilla and made me think I was lounging on the beach, when instead I was freezing my butt off in upstate New York. The smoothie was so thick and yummy and I knew I had to recreate it at home. I made a couple changes, but here it is!
Cinnamon Colada Smoothie
- 1/4 cup of plain whole milk yogurt
- 1/2 frozen banana
- 1/4 cup frozen pineapple
- 1 1/2 cups coconut milk (or however much you need for mixture to blend smoothly)
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- This is easy - put all the ingredients into a blender and mix! If it's too solid. add more coconut milk.
