It finally feels like spring! Yesterday on our lunch break a bunch of us went outside and sat in the grass at Central Park and the sun felt so amazing. I'm trying not to get too attached though because who knows what could happen - it's only the beginning of March. This week I've been deep into my House of Cards marathon and I can't decide who's team I'm on - Claire or Frank? Does anyone have a favorite? But can they really be favorites? They are all so evil.
I've talked about this before but I am really trying to up my salad game. I had fennel for the first time a couple weeks ago while out to lunch and I was surprised at how much I enjoyed it! It's so crunchy and fresh. I've been eating this shaved fennel and citrus salad all week and am in love.
Shaved Fennel and Citrus Salad
- 1 bulb fresh fennel
- 2 naval oranges, peeled and sliced
- 3 sprigs fresh mint
- Fresh greens - I used baby kale
- salt and pepper for seasoning
For the dressing
- 1/4 cup EV olive oil
- 1 juice of fresh lemon
- 2 teaspoons apple cider vinegar
- salt and pepper for seasoning
- Wash fennel and shave bulb with grater. Keep the greens at the ends for garnishes.
- Toss shaved fennel, mint, fresh greens and oranges. Season with salt and pepper and top with fennel leaves.
- Mix together olive oil, lemon juice, apple cider vinegar, and spices for dressing and pour over salad. Mix and enjoy!
