We've been watching Louie, a tiny Havanese puppy, for the past few days and I am completely in love. He is so floppy and squishy and loveable! He leaves today and my heart is broken. I desperately want a dog of my own but have been holding off since I wouldn't be able to bring him to work with me. Maybe one day.
It's been so hot lately that I've been feeling like I'm in a fog. I'm not just talking hot - I am talking so hot that when I leave for work in the morning it kind of feels like I'm walking through a swamp. Gotta love those New York summers. This week it doesn't look like it's going to cool down anytime soon, so I'll probably just be permanently sweating. Tonight I'm meeting one a friend for dinner and tomorrow night I'm finally going to Wassail, the cider bar in the Lower East Side to celebrate a friends birthday. Right now cider sounds refreshing whereas beer just sounds sticky, so I'm looking forward to that. I hope you're all having a good week!
Avocado Lime Popsicles
Pour the avocado mixture and the plain coconut cream and honey mixture into 6 popsicle molds, alternating layers. Do a couple layers and freeze for 30 minutes. Remove the popsicles and add in more layers, and the popsicle sticks. Freeze for 4 to 5 hours.
Remove from freezer and take the popsicles of our their molds. Lay them on parchment or waxed paper and drizzle with dark chocolate and sprinkle coconut flakes on top. Refreeze for 10 minutes and enjoy!
- 1 ripe avocado
- 1 can coconut cream
- 2 limes, juiced
- 1/4 cup honey
- 1/4 cup unsweetened coconut flakes (two tablespoons reserved for sprinkling)
- 1/4 cup dark chocolate, melted
Using a blender, mix avocado, 1/2 can of coconut cream, lime juice, half the honey, and coconut flakes until smooth. In a separate bowl, mix the other half of the coconut cream and the honey together.
