Although I love going away on the weekends, one of my least favorite feelings is a Monday at work after I've just gotten in super late on Sunday night. I'm always low on food and energy, and have to spend money on lunch and snacks to get me through the day. It's the WORST!!! Also on these days I always end up staying late at work even though I plan to go to the gym. This was exactly my thought last night as I was sitting on a phone call late at work and then decided to skip the gym and instead head to Key Foods to buy a pint of ice cream for dinner. Ugh.
Over the weekend I was in Rhode Island with Pat's family and it was literally the hottest weekend I've ever experienced. Normally the beach is breezy but nope, this time I was dripping sweat basically 24/7 and I am concerned that I got too much sun because the skin on my knees kind of hurts. Other than the oppressive heat, it was fun to be at the beach, not think about work, and to eat some good seafood. Here's to hoping that this week isn't as hot!
Call me basic, but avocado toast is my jam. If I am out to breakfast or brunch and it's on the menu, there's a 90% chance that I'm getting it. It's abundant in the city and versions that I think really stand out can be found at The Elk, Stone Fruit Espresso + Kitchen, Toby's Estate, and Dudley's. However, when I'm trying to not spend any money (which is normally) I make it at home which is just as tasty. Here are three different make avocado toast with items that you might normally have lying around.
Avocado Toast Three Ways
(Three combinations that all use hearty whole wheat or multi-grain bread)
Use rip avocado and mix with salt, black pepper, red pepper, and fresh squeezed lemon.
Avocado + Hard Boiled Egg + Sliced Radish + Chopped Chives + Red Pepper
Avocado + Sliced Cherry Tomatoes + Fresh Mint + Goat Cheese
Avocado + Smoked Salmon + Sliced Red Onion + Capers
