This has been a week of rather bland lunches, spinning classes, and constantly sweating. Last night my sister and I trekked into DUMBO to go to West Elm for new kitchen material, only to realize that the "market" store had closed minutes before and only the bedding/furniture store was open. Sigh. To make ourselves feel rewarded for the hard work we got take-out sushi from my favorite place in the neighborhood and ended up running into one of the puppies that we dog-sat a couple weeks ago, so it was worth it. I rarely indulge in take-out in New York 1. because it gets expensive and 2. I actually enjoy cooking but sometimes it's exactly what I need.
My mom, sister and I are headed up to Vermont this weekend for a ladies weekend and I'm excited to escape the city for a few days. I'm not sure what we'll be up to there but I'm looking forward to getting outside and (hopefully) seeing some cows grazing in a field. Have a great weekend!
Peach and Burrata Toasts
Lightly toast baguette slices, and cut up peaches into thin slices.
Lay toasts on a plate and add spoonfuls of burrata and some sliced peaches on top.
Garnish with greens and season with olive oil, salt & pepper
- 1 fresh baguette, sliced
- 3 or 4 ripe peaches
- 1/2 pound, burrata
- 1/4 pound, pea sprouts
- fresh mint sprigs
- olive oil, salt & pepper for flavoring
