Happy Thursday! My friend, Caroline, has been living with me for the past week before she moves into her new apartment on the Upper East Side. She just moved here from Boston to start interior design school at The New School. I'm so excited that she's joining me here, can't wait to go on so many adventures, and to watch her become an amazing interior designer! Over the years it's been awesome to watch my friends pursue their dreams.
When I think about my friendships, one of the things that I'm most thankful for is how I am still so close with many of my high school friends. As I've moved to NYC I've met a lot of new amazing friends (at work, through mutual friends, etc.), but most of the people I connect with here and stay in touch with are from high school. I value all of my friendships but I think it says a lot that no matter how much time passes, my hometown friends and I have still remained close and I know they are there for me to lean on. This sounds so corny, but I love watching them all go through new chapters in their lives, and all being together as we grow!
Speaking of friendships, naturally one important thing that comes to mind is grilled cheese. Cheese (in any form) is something that my friends and I all bond over. When it's melted and in between slices of bread, it's the best.
Green Tomato Grilled Cheese
(serves 2)
Lay bread slices in pairs and on one side, layer shredded cheddar cheese and add slices of tomato. On the other side spread a thin layer of creme fraiche, season with salt and pepper. Carefully place the side with creme fraiche on top of the side with the tomato to form a sandwich.
In a medium skillet, heat up butter. When it starts to bubble, place in sandwiches. Cook on either side until golden brown, flipping carefully. Slice and enjoy!
- 4 medium sized green tomatoes, sliced
- 8 slices bread
- 1/2 cup shredded cheddar cheese
- 1/4 cup creme fraiche
- 2 tablespoons butter
- salt and pepper for seasoning
- 1 fresh sprig of basil
