I wish I had something cool to write about in this post, but the truth is is that I've been home sick for the past two days with a stomach bug. I'll spare the details, but it's basically made looking at food (and pictures of food) painful for me, so sadly I haven't touched the meal prep I did on Sunday night. I haven't done much of anything the past two days except for sleep, watch Suits, and listen to Ed Sheeran's new album on repeat. I am obsessed with it!!
I also did dive into Gilmore Girls: A Year in the Life. I'm saving my full thoughts on the series until I have completed everything, but right now I will say that I loved the show but felt like Season 7 fell off a bit. The Lorelai and Christopher stuff was weird, I didn't like how April moved to New Mexico, and Logan was just no longer exciting to me. Ugh, I am definitely Team Jess. Anyways, after consulting with others, I discovered that thinking that Season 7 was lesser than the rest was a common feeling, which makes me feel better.

Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
Mix the dry ingredients together and add the butter. Using hands, mix butter with dry ingredients until butter is pea sized.
Add the Greek yogurt, milk, vanilla extract, and Dona Chail to the dry butter mixture and stir everything together to form a dough. Add the Cinnamon Sugar mixture. Use hands to knead the dough gently into an even ball.
Transfer the dough to a well floured surface, flour the top of dough, and pat into a flat disc about 1 inch high.
Cut scones (you can do triangles, squares, etc.) For this version I used a 3 inch biscuit cutter for circles. Transfer the scones to the prepared baking sheet. Bake the scones for about 15-18 minutes until they are lightly golden at the edges. When scones are baking, mix together ingredients for the glaze. The result should be thick but still pourable.
Remove scones from oven and cool on baking rack. Drizzle with glaze and enjoy!
For the Scones:
- 1/3 cup Dona Chai tea concentrate
- 1 1/2 cups whole wheat flour
- 1/2 cup unbleached all purpose flour
- 1 Tbsp. baking powder
- 1/4 cup white sugar
- 1/2 tsp. sea salt
- 1/4 tsp. cinnamon
- 6 Tbsp. unsalted butter, chilled
- 1 tsp. vanilla extract
- 3/4 cup whole milk yogurt
- 1/4 Cinnamon Sugar mixture: 1/4 cup dark brown sugar roughly mixed with 1 teaspoon of cinnamon
For the glaze
- 1 1/2 cups confectioners sugar
- 4 tbsp. Dona Chai concentrate
- 1/2 tsp. vanilla extract
- 2 tsp. whole milk
- dash of salt
