Baked Banana Doughnuts

I can’t believe it’s been almost a month since I’ve posted! Since my last recipe some important things have happened:

My birthday: I spent the night before going out to dinner with Pat at Mission Chinese, and the actual day of my birthday meeting up with friends at a brewery in Greenpoint. It was really fun and my brother even came into the city which was special - it’s not often that all the siblings get to hang out. The day after my sister, some friends and I watched the New York Marathon. There’s something so amazing about a marathon - it’s one of the only sporting events (besides the Olympics) that makes me feel like I’m going to burst into tears. Just watching thousands of people doing something so difficult and accomplishing a goal or dream makes me emotional. The energy at the marathon was amazing. We watched in Bed Stuy and there was a live band playing music the entire time and everyone was cheering on the runners. I love New York, but watching the marathon made me love it even more.

The second thing that happened was last night - the Midterm elections! I’m not going to lie, the current state of this country and lots of the issues happening in politics right now has really affected my mood. I feel like I’m always down, feeling hopeless and stressed out. I want to help but the past year I’ve found myself just sitting and not even knowing what I should be doing to help. I’ve made phone calls to senators, written postcards, donated to campaigns, and just generally have been trying to educate myself more about the world and politics but nothing seems like enough. I also have to admit that I’ve been unable to focus on baking and this blog as much as I’d like. Something about it has just seemed so trivial, even though I do try to tell myself that I also need to focus on life’s smaller joys.

Anyways, where is this all going? Well last night the left made HUGE gains! True, not everything I was hoping for happened (like Beto making Texas blue), but there are so many things that happened to give me a glimmer of hope, like the amount of women and minorities that were voted into political office. It’s hard, but it made me remember that we need to take baby steps, and although the work isn’t nearly done, the world can be a good place.

Thank you for reading a recap of where my brain has been at the last couple of months! Now that I am a new age (I’m trying to see it as a fresh year) I’m making an effort to remember that balance in life is important, and it’s necessary to focus on things that are for the bettering of the world, but also things that make me happy too.

Preheat the oven to 350°F and grease a donut pan (I use coconut oil)

In a large mixing bowl, beat together the oil, eggs, sugar, banana, Greek yogurt spices, salt, and baking powder until smooth. Add the flour, stirring just until smooth.

Transfer the mixture into a ziplock bag and carefully cut off the tip. Squeeze the mixture into each donut well until it’s about 3/4 full (they will rise a bit when cooking)! 

Bake the doughnuts for about 15 minutes, until a toothpick that’s inserted comes out clean.

Let cool and glaze! For my glaze, I used 1 1/2 cup confectioners sugar, a tablespoon of juice from crushed blackberries, and 2 teaspoons of milk mixed together!

Baked Banana Doughnuts
(makes 12 doughnuts)

  • 1/2 cup vegetable oil

  • 1 very ripe banana, smashed

  • 1 3/4 cups all purpose flour

  • 3 large eggs

  • 1 cup granulated sugar

  • 1/2 cup whole milk Greek yogurt

  • 1 1/2 teaspoons salt

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon cinnamon

Went to Mexico a couple weeks ago and ate a diet of 95% tacos and refreshing cocktails. 🌴🍹 Getting out of the Northeast when it was 6 degrees wasn’t bad either. 🤗 Mexican food is one of my favorite cuisines and the seafood in Tulum was so fresh and flavorful. Next places in Mexico I want to visit: Mexico City and Oaxaca. #travel #mexico #tulum

In the past couple of months I felt zero urge to bake and it was nice to get away from it for a while to clear my head, relax, and not spend hours taking/editing photos. Moving forward I’ll be doing a little less baking, and more cooking and non-cooking photos, as I’m expanding my interests and also changing my diet (to involve wayyy fewer sweet things). 🌟
I still enjoy creating but I think it’s just starting to come through in different ways! This morning I was at the grocery store and I saw these beautiful artichokes, so I steamed them and made a tzatziki dipping sauce. It was SO simple and so good! 
I’m glad to be back taking some foodie pics. 😊 #f52grams
Better late than never! 🍪 The day of the #virtualcookieparty2018 is over soon and I ALMOST forgot to post my pic but here it is! This year I made brown sugar coconut macaroons, dipped in dark chocolate and topped with sprinkles (the more glitter the better). ✨ The recipe is really easy with just a few ingredients, and is on the blog now. Feeling hopeful after the Midterm elections so I was motivated to post a recipe on the blog after almost a month of not posting. 😱 There’s work to be done but it’s a good reminder that it’s important to focus on the big issues in life, but also the little things that make you happy.
