Hello from the New Orleans airport! I'm on my way back from an amazing trip here with my mom, sister, and some of the youth group members from my childhood church. It was full of good food, sightseeing, and of course, a lot of heat and humidity. I was basically sweating 24/7. New Orleans is such a magical city full of history and things to do and see- I can't wait to finally look through my photos when I get home and share them!
In other news, it is Popsicle Week 2017! Popsicles are some of my favorite treats for the summer - you can make them out of almost anything (see here and here for some of my prior recipes). There is nothing better than cooling off on a delicious frozen treat when it is scorching outside - am I right? One of my favorites of all time is a classic Fudgesicle - they are perfectly chocolaty, soft, and satisfying. I tried to recreate a (slightly) healthier version of a Fudgesicle with these Nutella Coconut Popsicles and they are just as tasty. It's a win-win situation!

Nutella Coconut Popsicles
Blend all of the ingredients in a blender at high speed, and transfer into six popsicle molds of your choosing.
You can also add fun toppings if you'd like! I did chocolate drizzle with coconut and pistachios.
- 1/2 cup nutella
- 2 cups full fat coconut milk
- 1/2 cup whole Greek Yogurt
- 3 tablespoons honey
- 1 teaspoon ground cinnamon
- 2 teaspoons cocoa powder
