It’s like I blinked and December is almost over! I cannot believe it. Some things I have actually done in the lead up to this holiday season:
Participate in some festive activities! Ie. holiday parties, secret santa, BOWLING
Had quality time with family and friends
Spent more money than I ever have on holiday gifts. My bank account is crying.
I was talking to my dad a couple weeks ago when I was home in Connecticut and we got our tree, about how the lead up to Christmas is actually more magical to me than THE day of Christmas itself. I love the excitement that’s in the air, smelling the pine needles on the New York streets (how New Yorkers get their Christmas trees!), having holiday brunches, festive wreathes, everything about it! This year, I’m looking forward to a couple more weeks in the city and then heading back to Connecticut for some relaxation. Happy holidays!

Brown Sugar Macaroons
Preheat oven to 325 degrees F. In a small bowl, combine coconut, flour, cinnamon, sugar and mix together well. Once combined, add in egg whites and vanilla and mix well.
Using two spoons, shape macaroons into round shape and place on a lined baking sheet, about 2 inches apart. Bake for 20 minutes until coconut flakes have turned golden brown.
Let cool and dip into melted chocolate and top with sprinkles!
1 1/2 cup sweetened shredded coconut
1/3 cup brown or turbinado sugar
2 large egg whites
2 tbsp all-purpose flour
1/2 tsp cinnamon
1 tsp vanilla extract
1/2 cup dark chocolate, melted (for topping)
sprinkles (for topping)
