After a long day at work I usually try to go to the gym and make a smoothie afterwards. I'd been having a good streak with running outside though, and going farther than I'd ever before. That is, until it started getting dark at 4pm and I don't really like running in the dark. Plus, I have terrible eyesight and don't wear contacts, so I'm nervous I'd crash into something.
I've been trying to run more on weekends now and therefore have been trying to think more outside the box with my smoothies, when I have time to actually think about the ingredients instead of throwing everything together, jumping in the shower, and then into bed to watch hours of Netflix. I love dates (my mom says they are nature's candy) so decided to make a smoothie using them. With the addition of some fruit and peanut butter it was totally delicious and tasted more like a milkshake. Yum!
Date & Peanut Butter Smoothie
(makes 2 smoothies)
- 4 dates
- 3 tablespoons of peanut butter
- 1/2 cup of frozen pineapples
- 1/3 cup of frozen mango
- 1 banana
- Coconut milk (enough to cover dry ingredients)
Chop banana and dates, and add them along with the rest of the ingredients to a blender. Blend until mixture is smooth, adding more coconut milk or water if necessary.
