My Labor Day fun of clam chowder, the beach, and bonfires came to a grinding halt on Monday night when my Amtrak train got stuck for FOUR HOURS near Groton, CT due to a fire and fallen tree on the tracks. I normally don't like to be a complainer about things that are out of my control but once we were sitting for an hour in the darkness and no new announcements, I started to go a little nuts. Four torturous hours later we finally made it to Penn Station at 3am and I grabbed a cab (and was charged $5 for canceling an Uber - whoops) and upon arrival at my apartment I immediately threw down all my bags and headed straight to bed. Needless to say I have pretty much been a zombie all day long and after I finish writing this post, I'm going to bed. It's currently 7pm.
Otherwise, Labor Day was a fun, much needed long weekend and although I am sad to say goodbye to summer, technically, it is still pretty hot in New York and I don't think it will be going away any time soon. I'm looking forward to a short work week again and catching up on sleep for reasons stated above!!
I've always been fascinated with acai but I've never actually bought it and made it myself. I work in publishing (with a lot of cookbooks), so was inspired by one in particular that I've been working on the past couple of months - Nutrition Stripped by McKel Hill. She has a fantastic acai bowl recipe and is constantly posting beautiful pictures of them on her Instagram, so I was inspired and finally went to Whole Foods to buy the frozen packets so I could try making one myself.
Blueberry Banana Acai Bowl
Blend acai, banana, blueberries and coconut milk until thick and smooth.
Pour into bowl and garnish with more fresh blueberries, goji berries, coconut, and superseed blend and enjoy!
- 1 packet frozen acai berries (from Whole Foods)
- 1/2 frozen banana
- 1/2 cup blueberries (save a handful for garnish)
- 1/2 cup coconut milk
- 1 handful goji berries
- 1 handful shredded coconut
- 1 handful superseed blend (I use this one from Trader Joe's)
