When I made this loaf concoction, I was truly unclear about how it was going to come out. I knew it would either be REALLY good, or horrifyingly bad. Like the time I made a banana loaf and thought it was cooked all the way through, and then when I flipped it and it basically collapsed and batter came spilling out of the center? Yeah, it could have been that bad. With more luck, and perhaps some more skill, this time, it ended up being a success! The tahini and chocolate/coffee flavors really complimented each other, and when I cut into the inside I was greeted with "oohs and ahhs" over the pretty pattern created.
Having a baking experiment go well is one of the main reasons why I enjoy baking, to be honest. I think a lot of people are intimidated by baking because it needs to be so exact in many ways, but I truly believe that once you master a basic recipe, you can make so many different things from it by modifying it slightly. If you know a sweet scone recipe, just use less sugar and chives, and it becomes savory. If you can make banana muffins, then you can make blueberry muffins. Stuff like that. And hey, not everything comes out perfect, but that is where we learn from our mistakes!
Preheat oven to 350 degrees F. In a bowl, combine the flour, sugar, baking powder, and salt.
In another bowl, combine the eggs, coconut milk, oil and vanilla; stir into dry ingredients just until smooth. Divide batter into two bowls. In one half of batter, add tahini and honey and stir to combine. In second bowl of batter, add coffee and cocoa powder and stir to combine. One batter will be a dark brown, and the other will be a light brown.
Pour the batters, alternating them back and forth, into a greased 8 1/2 x 4 1/4 metal loaf pan. Swirl a bit with a fork if desired, but not so much that colors are combined together.
Bake for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

- 3 tablespoons butter, melted
- 2 tablespoons dark cocoa powder
- 1/4 cup strong brewed coffee
- 3 tablespoons tahini
- 2 tablespoons honey
