Over the weekend we had some of the best weather yet in New York. Pat and I explored Prospect Park and Central Park, and had time to do a lot of cooking and check out a bar called Congress in the neighborhood that I've been wanting to try (pics later).
I'm a big soup person and tomato basil soup happens to be one of my favorites. I've made several attempts at making soup but have never been quite happy with the results. One stand-out memory is the time I made butternut squash soup but used WAY to much ginger. It was unbearable. This time I knew I needed to buckle down and find a recipe, and follow it this time. I found this recipe from one of my favorite blogs, Local Haven, and used a leftover baguette to make croutons instead of cornbread and served it with basil and fresh grated parmesan. It is creamy and has a wonderful flavor. I froze some of it and can't wait to eat it over the next couple of weeks as it starts to get a bit more chilly. Happy Monday!
